Recipe: Sweet Ginger Lime Ceviche

Ginger and lime perfectly compliment your white fish of choice in this tasty dish.

Ingredients

  • 5 pounds of white fish (sole, snapper, halibut, etc.) chopped and marinated in lemon juice for 1-3 hours (or ¾-1½ hours if if under vacuum seal)
    • Use 1½-1¾ pounds of lemons, juiced per pound of fish
  • 5 cups diced roma tomatoes, drained
  • 1 cup diced red onion
  • 3 Tbsp ginger zest
  • 6 Tbsp (3 oz) olive oil
  • 6 Tbsp (3 oz) raw honey
  • 1½ Tbsp lime zest
  • 1½ cups chopped cilantro

Directions

  1. Mix all ingredients well
  2. Pack tightly in half-pint or one-pint jars filled to very top

Notes

Should last one to two weeks under refrigeration.
