The hickory sauce really makes this raw bison dish something special. Top it off with a bit of cilantro and you’ve got a healthy, protein-packed meal.
Makes 8 burgers
Ingredients
- 2 pounds ground bison
- ½ red onion, diced fine
- ½ cup raw honey
- ½ pound raw butter, grated
Directions
- Mix ingredients above with hands until evenly blended. Try to keep butter and bison cold during this time.
- Make patties by hand.
Hickory Sauce
Ingredients
- 1 cup chopped sundried tomatoes
- 8 tsp raw honey (2 tbsp + 2 tsp)
- 4 tsp raw vinegar (1 tbsp + 1 tsp)
- 1 large clove of garlic, minced
- ½ tsp curry powder
- ¼ tsp cayenne powder
- enough spring water to blend into a thick sauce (about ¾ to 1 cup)
Directions
- Mix above ingredients with enough spring water to blend into a thick sauce (about ¾ to 1 cup).
Serving Suggestions
Place on collard green “bun” to eat like a taco. Top the burger with a slice of raw, unsalted cheddar cheese, and add cilantro garnish. You can add a raw, unsalted pickle, too.
Place sauce on patty, or in separate individual container.
Eat raw; do NOT cook.
