Recipe: Bison Burger Patty

The hickory sauce really makes this raw bison dish something special. Top it off with a bit of cilantro and you’ve got a healthy, protein-packed meal.

 

Makes 8 burgers

Ingredients

  • 2 pounds ground bison
  • ½ red onion, diced fine
  • ½ cup raw honey
  • ½ pound raw butter, grated

Directions

  1. Mix ingredients above with hands until evenly blended. Try to keep butter and bison cold during this time.
  2. Make patties by hand.

 

Hickory Sauce

Ingredients

  • 1 cup chopped sundried tomatoes
  • 8 tsp raw honey (2 tbsp + 2 tsp)
  • 4 tsp raw vinegar (1 tbsp + 1 tsp)
  • 1 large clove of garlic, minced
  • ½ tsp curry powder
  • ¼ tsp cayenne powder
  • enough spring water to blend into a thick sauce (about ¾ to 1 cup)

Directions

  1. Mix above ingredients with enough spring water to blend into a thick sauce (about ¾ to 1 cup).

 

Serving Suggestions

Place on collard green “bun” to eat like a taco. Top the burger with a slice of raw, unsalted cheddar cheese, and add cilantro garnish. You can add a raw, unsalted pickle, too.

Place sauce on patty, or in separate individual container.

Eat raw; do NOT cook.
