Ginger and lime perfectly compliment your white fish of choice in this tasty dish.
Ingredients
- 5 pounds of white fish (sole, snapper, halibut, etc.) chopped and marinated in lemon juice for 1-3 hours (or ¾-1½ hours if if under vacuum seal)
- Use 1½-1¾ pounds of lemons, juiced per pound of fish
- 5 cups diced roma tomatoes, drained
- 1 cup diced red onion
- 3 Tbsp ginger zest
- 6 Tbsp (3 oz) olive oil
- 6 Tbsp (3 oz) raw honey
- 1½ Tbsp lime zest
- 1½ cups chopped cilantro
Directions
- Mix all ingredients well
- Pack tightly in half-pint or one-pint jars filled to very top
Notes
Should last one to two weeks under refrigeration.
